Spruce tips. Norway spruce, Picea abies, is a common landscape spruce in the Mid-Atlantic region. The spruce tips are the young light green new spring growth at the end of the branches of the tree in the short window before the tips become needles. Timing is key. Each tip is hand harvested; the piney-citrusy flavor adds zing when the tip is pulled apart as a raw garnish for cucumber salad, pilaf, etc. or made into a syrup and strained for desserts or cocktails. Spruce tips freeze well.
